How to brew our Chai

Before you brew, read this...

How much Sugar?

Lets make the case for reclaiming sugar, in small amounts sugar is terrific and very nutritious. Buying sugar as a culinary ingredient is associated with healthy traditions - like cooking from scratch and brewing our chai.

The chai spices need the sweet to perform to give you that spicy burn. If you think your chai is missing that spicy burn in the back of your throat then try adding a little extra sweet.

For optimum flavour and spiciness we recommend equal amount of sugar to chai spices. You may use less sugar if you’re using Oat milk or other milk alternative. As your brewing technique progresses you can reduce the amount of sugar to your liking.

How much Milk or Milk Alternative?

How thin do you like your chai? Well that depends on how much milk (or milk alternative) you use. We use the ratio - 70% water to 30% milk - for brewing our chai at our bicycle café, which is not too thin and not too creamy.

Due to its higher fat content, cows milk will absorb more of the flavour of the spices so you might want to add an extra pinch of chai spices.

Brewing Guide

Follow our 4 easy steps to make the perfect chai.

What you will need:

  • pot
  • scale or measuring jug
  • sieve

Boil 500ml (2 cups) of water in medium size pot on high heat.

Add 9mg (1dsp) of chai spices to the boiling water and boil for 3-4 minutes.

Add 125ml (⅟2 cup) of milk or milk alternative to the boiling chai stirring frequently with a spoon or ladle.

When chai rises to top of pot (foamy froth), Turn off heat. Add sugar or sweetner.


Sieve into cup and Enjoy!
